Ingredients
  

  • 1/2 cup shelled pistachios
  • 8 digestive biscuits or graham crackers
  • 3 tbsp melted butter
  • 200g cream cheese
  • 1/2 cup heavy cream
  • 1/3 cup powdered sugar
  • Fresh raspberries

Instructions
 

  • 1. Make the CrustBlend pistachios and biscuits into fine crumbs. Add melted butter and stir until combined.
    2. Press the CrustPress the crust mixture into silicone molds or cupcake liners. Press down firmly and evenly.
    3. Make the FillingIn a bowl, beat cream cheese and powdered sugar until smooth. Add heavy cream and beat until thick and fluffy.
    4. Fill the MoldsSpoon the filling over the crust. Smooth the tops.
    5. Chill to SetRefrigerate for at least 3 hours or overnight for best results.
    6. Add RaspberriesTop each dome with fresh raspberries just before serving.
    7. Serve & EnjoyUnmold and serve chilled. Perfect for impressing guests or treating yourself.
